A fast-growing food production company known for innovation in institutional baking is seeking a skilled Institutional Baker – Research and Development to join its team in Fargo, North Dakota. This role is perfect for a hands-on dough expert who thrives on problem-solving and product innovation. You’ll collaborate closely with sales and R&D leadership to reverse engineer, refine, and develop pizza dough recipes for large-scale production across multiple plants. Institutional Baker – Research and Development Responsibilities:
- Develop, test, and scale pizza dough and bread recipes for institutional baking
- Reverse engineer client recipes to meet large-scale production needs
- Partner with sales and R&D to translate client requirements into shelf-stable, scalable dough solutions
- Explore and implement new ingredient innovations, including gluten-free applications
- Conduct weekly tastings and refinement cycles with the head baker and product teams
- Participate in client meetings and trade shows to inform product development
- Ensure consistency and quality across recipes at all three production facilities
Institutional Baker – Research and Development Requirements:
- 10+ years of experience in institutional or commercial baking, ideally with pizza or yeast-based products
- Deep understanding of yeast, hydration, proofing, temperature control, and shelf life considerations
- Experience developing high-output dough formulations suitable for automated production
- Ability to troubleshoot and optimize recipes with limited information
- Strong communication skills and comfort engaging directly with clients and internal stakeholders
- Experience with gluten-free dough innovation is preferred
- Comfortable working onsite and collaborating with multiple departments
